Spring Goddess Salad

Botanical Bites: Prepare, Mix, and Serve…

1 bunch of fresh dandelion greens chopped

3 green onions thinly coined

1/4 cup of sunflower & hemp heart seeds mixed

1 Tbs slivered almonds or cashews

Drizzle of olive oil

Juice from 1/4 of a lemon, freshly squeezed

Sprinkle of sea salt and ground pepper

Fresh dandelion flowers to garnish dish

My favorite is dandelions. I love when they pop up above the ground in their courageous beautiful yellow brilliance, under the Spring sun. Their jagged rosette of leaves, packed with minerals and vitamin. Dandelion embraces harsh changes that may feel unfamiliar or new with the changing of the seasons, unfurls and grows nourished by the sun, and shines with determination and purpose.
